Lentil Patti Stack
- 300g packet Sanitarium Vegie Delights Lentil Patties
- 1 red capsicum, seeds removed
- 1 yellow capsicum, seeds removed
- 2 roma tomatoes, quartered
- Olive oil spray
- 1 clove garlic, peeled
- 1 bunch baby bok choy, separated
- ¼ cup reduced fat mayonnaise
- ¼ cup shaved parmesan cheese
- ¼ cup parsley leaves
- Pre-heat BBQ to medium heat. Place lentil patties, capsicums and tomatoes on the grill and cook for 5 minutes each side.
- Spray BBQ hotplate with oil and place garlic and bok choy on. Cook for 2-3 minutes. Remove. Crush garlic into mayonnaise.
- Place lentil patties on serving plates and top with vegetables, parmesan and parsley. Serve with garlic mayonnaise.
