Rice and Vegetable Quiche
- ¾ cup brown rice, cooked and drained
- 2 eggs
- 3 egg whites
- ⅓ cup Sanitarium So Good Lite
- ½ cup reduced fat shredded tasty cheese
- ¼ cup parsley, chopped
- 2 carrots, grated
- 2 zucchinis, grated
- 1 onion, grated
- 100g button mushrooms, finely sliced
- Pre-heat oven to 190°C. Lightly grease a quiche or pie dish.
- Whisk eggs, egg whites and So Good together until light and fluffy. Add cheese and parsley.
- Mix together rice and vegetables and place in prepared dish. Pour egg mixture over the top. Bake for 35 minutes or until cooked.
- Serve with a green salad.
