San Choy Bow
- 1 tablespoon olive oil
- Half 480g packet Sanitarium Vegie Delights Roast, diced
- 1 onion, sliced
- 1 clove garlic, crushed
- 1 red capsicum, diced
- ¾ cup frozen peas
- ½ tablespoon honey
- ½ tablespoon reduced salt soy sauce
- 8 lettuce leaves
- Pre-heat BBQ hotplate to medium. Combine oil, roast, onions, garlic and capsicum and place on BBQ and cook for 3-4 minutes.
- Add peas, honey and soy sauce and toss well. Cook a further 1-2 minutes.
- Divide mixture between lettuce leaves and serve.
